WHAT IS KHORASAN WHEAT?

Now we have Khorasan Flour for your convenience! Khorasan is very similar to Kamut® brand Khorasan grain. The difference is in the name.
Khorasan is an ancient grain related and compared to Durum wheat. Khorasan is a NON-GMO grain. Some people who are sensitive to wheat have been known to be able to use khorasan in their diets. Khorasan, like spelt, is more easily digested, more water-soluble, and tends to be more friendly with gluten-intolerant people. 

Note: Khorasan is not gluten-free, but the gluten will break down much easier in your body.

 

BETTER THAN ORGANIC?

Just because something says it is organic, doesn’t mean there were no chemicals used growing it, and reports say those organic chemicals are more toxic than conventional ones.

We typically use an early herbicide, just to hold back the weeds so we actually have a crop to grow and don’t mix our grain with wild oats, barley, or something else that would contaminate it. We also use fertilizer (it’s like taking vitamins) to maintain soil and crop health. Sometimes, when the plant is deprived of nutrients, it will make its own toxins, so we had our grain tested and it came back clean with the report “no detection” from the Food Lab we sent it to. They conducted a thorough test to make sure it was clean from any chemical residue. Rest at ease when you buy from us. We will continue to test it to ensure the highest quality we can provide. We frequently get asked about glyphosate; we do not use glyphosate to ripen our grain or during the growing process. Glyphosate kills things and we allow our grain to ripen naturally - using wind, sun and time.

 

HOW DO I USE KHORASAN WHEAT IN RECIPES?

Khorasan is best used in noodle or pasta recipes or even in cakes, donuts, pie crusts, and pastries. It makes great bread, even baguettes, when used by itself. It even works really well feeding your sourdough start.
I also use it in my bread when I mix it with spelt and hard white wheat  and it turns out great! I love mixing grains when baking bread. 

The key to using Khorasan and substituting it in your regular recipes, is to use about 25% less khorsan flour than what your recipe calls for. Khorasan likes to soak up the water.

    We offer free shipping on this brown, Ardent Mills 25 lb bag of generic, conventional, naturally-grown, white all-purpose Khorasan flour.
    Ingredients:  Khorasan. (No preservatives added)

    We use our own family-grown, Idaho khorasan to send to the mill. Khorasan tends to be higher in protein and many minerals, especially selenium, zinc, and magnesium compared to modern wheat. It also tends to have a higher amount of lipids which gives you more energy than carbohydrates!

    The flour is naturally light in color (actually yellow-ish) and ready for baking. Khorasan flour is best kept in a cool, dark place to maintain its excellent nutrient value and it is best to use it as soon as possible, however white all-purpose flour will last longer on the shelf without going rancid and you still get the benefits of being much easier to digest than regular white flour.

I love the kamut grain it is my favorite grain! I use it everyday. We make pancakes, muffins, all kinds of breads: sourdough, regular, banana, pumpkin, and cakes with the kamut we grind into flour. We also really love to make cereal out of it. It has an amazing flavor, we grind it and boil it like cracked wheat cereal. We also grind it up a little finer and make a finer cereal. We absolutely love kamut and use it anytime we would use flour even to thicken gravies. We also get spelt for our extended family who can't do gluten. Thank you so much food dudes for providing such wonderful products!!! I have shared things I've made from kamut I have ground into flour with many many people and they always love it and want some!

Just bought some spelt from Jamie at Food Dudes. I'm experimenting with sprouted grain bread to lower glycemic index. I've read that fresh grain sprouts faster...this grain sprouts within 24 hours! So excited to have a source for locally grown top quality grains!

I love coming to the Food Dudes produce stand. I have gotten quality produce here for years! And when I found I couldn’t have wheat, I discovered that they grow both spelt and Khorasan Kamut!! These grains are so yummy. I use the Kamut to make bread, and the spelt to make muffins and non yeast items.
